Easy Skillet Penne Pasta

Ingredients You Need

  • 6 cups (18 oz.) multigrain or whole wheat penne pasta

  • 6 tablespoons extra-virgin olive oil

  • 6 cups chopped sweet or yellow onion

  • 6 yellow or red bell peppers, diced

  • 18 cloves garlic, minced

  • 5-1/2 lbs. canned Italian seasoned diced tomatoes, undrained

  • 1-1/2 teaspoons crushed red pepper flakes (optional)

  • 1-1/2 quarts (6 cups) Lindsay® Recloseables Italian Seasoned Olives or California Pitted Ripe Olives

  • 1-1/2 cups chopped fresh Italian parsley or basil


Cooking Directions

  1. Cook pasta according to package directions omitting salt.

  2. Meanwhile, heat oil in a large deep sauté pan over medium heat.

  3. Add onions, bell peppers and garlic; sauté 10 minutes or until tender.

  4. Add tomatoes and, if desired, pepper flakes; bring to a simmer. Stir in olives; simmer over low heat 10 minutes or until vegetables are tender, stirring occasionally.

  5. Drain pasta; stir into olive mixture; simmer 1 minute.

  6. Top with parsley.
