Chopped Salad with Olive-Caper Dressing

  • 2/3 cup honey Dijon or Italian salad dressing

  • 1/2 cup chopped Lindsay® Ripe Pitted Olives or Pimiento Stuffed Spanish Manzanilla Olives (or a combination)

  • 1 tablespoon drained Lindsay® Capers

  • 6 cups packed torn romaine lettuce

  • 1 large tomato, chopped

  • 1/2 cup (2 oz.) crumbled feta, goat or gorgonzola cheese

  • 1/2 cup chopped unpeeled cucumber

  • 1/2 cup finely chopped cooked chicken or 4 slices bacon, cooked crisp and crumbled

Cooking Directions

  1. In a small bowl, combine salad dressing, olives and capers; mix well.

  2. Arrange lettuce on four serving plates.

  3. Arrange tomato, cheese, cucumber and chicken over lettuce.

  4. Spoon dressing over salads.
