Cool Summer Salad

When it's too hot to cook, this cool summer salad is perfect. It's crisp and crunchy with banana peppers, toasted almonds, and tomatoes for a healthy side dish.

Ingredients

  • 1-1/2 teaspoons sherry vinegar or white wine vinegar

  • 1 teaspoon Dijon mustard

  • 1/4 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper

  • 2 tablespoons extra virgin olive oil

  • 6 cups packed mixed baby salad greens or torn red leaf lettuce

  • 1 cup cherry tomatoes, halved

  • 1/2 cup (2 ounces) shredded sharp cheddar or other favorite cheese

  • 1/2 cup drained Lindsay┬« Sliced Sweet Banana Peppers

  • 1/4 cup sliced almonds, toasted


Cooking Directions

  1. In a small bowl, combine vinegar mustard, salt and pepper.

  2. Gradually whisk in oil until dressing is thickened.

  3. In a large bowl, combine salad greens, tomatoes, cheese, almonds and peppers; toss lightly.

  4. Add dressing; toss again.

  5. Serve with additional freshly ground black pepper.
