Garlic and Olive Focaccini

Ingredients

  • 1 pound prepared pizza dough, divided into 4 (4 oz.) balls

  • 2 tablespoons pureed roasted garlic

  • 1 cup Lindsay┬« Ripe Pitted Olives, halved

  • 1/2 cup shredded asiago cheese

  • 2 teaspoons chopped rosemary

  • 2 teaspoons chopped thyme

  • Black pepper, to taste


Cooking Directions

  1. Shape each piece of pizza dough into a 5-6 inch disc.

  2. Place onto a well greased baking sheet.

  3. Spread 1/2 tablespoon of garlic puree on each, then dot with 1/4 cup of olives.

  4. Sprinkle with 2 tablespoons of asiago cheese and a 1/2 teaspoon of rosemary and thyme, then season with black pepper to taste.

  5. Allow to rest in a warm place for 30-60 minutes.

  6. Preheat oven to 400┬░F.

  7. Bake for 15-20 minutes until lightly golden.
