Golden Breaded Cod

  • 4 fillets (5 oz.) boneless, skinless cod

  • 1/2 cup plain bread crumbs

  • 1 tablespoon olive oil

  • 1/2 cup white wine

  • 1 teaspoon chopped lemon zest

  • 2 tablespoons salted butter

  • 1 pound asparagus, cut into 2-inch pieces and blanched

  • 3/4 cup Lindsay┬« Ripe Pitted Olives, halved

Cooking Directions

  1. Coat fish in bread crumbs and set aside.

  2. Heat oil in a large high-sided saut├ę pan over medium-high heat.

  3. Place fish in pan and cook for 3-4 minutes until lightly browned.

  4. Flip to other side, add white wine and lemon zest and bring to a boil.

  5. Turn heat down to simmer, cover and cook for 4-6 more minutes until fish is cooked through.

  6. Transfer fish to serving plates.

  7. Whisk butter into pan and toss in asparagus and olives. Cook for 3-4 minutes or until asparagus is slightly tender.

  8. Plate with fish and serve hot.
