Ingredients
3 cups rolled oats (not instant)
1 cup unsweetened flaked coconut
1 cup pumpkin seeds
1/4 cup chia seeds
2 1/2 tsp ground cinnamon
1 tsp ground ginger
1 tsp sea salt
1/2 cup Lindsay Buttery olive oil
1/2 cup real maple syrup
Our Buttery Olive Oil gives this granola an amazing, rich flavor.

Preheat oven to 300F. In a bowl combine rolled oats, flaked coconut, pumpkin seeds, chia seeds, cinnamon, ginger and salt. Stir to combine. Add Lindsay olive oil and maple syrup. Mix well.
Turn out on 2 parchment lined 1/2 sheet pan (12"x17") and bake for 30-45 minutes stirring every 8-10 minutes until golden brown and crisp. For more granola clusters, stir mixture less frequently during baking.
Remove from oven, let cool and store in a sealed container.
