Italian-Style Pasta Salad

The perfect pasta salad for any summer BBQ, potluck or picnic! This classic Italian recipe uses tender black olives, artichokes, mozzarella and peppers.

Ingredients

  • 12 oz. rotini, penne or bow tie pasta, uncooked.

  • 1 (6 oz.) can Lindsay® Ripe Pitted Olives, drained, coarsely chopped.

  • 1 cup drained Lindsay® Red Roasted Peppers or or Lindsay® Sweet Cherry Peppers or Lindsay®Sliced Sweet Banana Peppers, cut into strips.

  • 1 (6-1/2 oz.) jar marinated artichoke hearts, drained, coarsely chopped

  • 1 cup (4 oz.) diced provolone or mozzarella cheese

  • 1 cup (4 oz.) diced salami

  • 1/2 cup light or regular Caesar or Italian salad dressing

  • 1/4 cup sliced fresh basil or chopped fresh Italian parsley


Cooking Directions

  1. Cook pasta according to package directions.

  2. Meanwhile, in a large bowl, combine remaining ingredients.

  3. Drain pasta; add to bowl, tossing well.

  4. Serve at room temperature or chill up to 24 hours before serving. Serve with freshly ground black pepper, if desired.
