Mexican Cabbage Slaw

Ingredients

  • 2 cups green cabbage, shredded

  • 2 cups red cabbage, shredded

  • 2 cups chicken breast, cooked and shredded

  • 1 cup Lindsay® Sliced California Ripe Olives

  • 1 cup roma tomatoes, Seeded and diced (1/4-inch)

  • 1 cup canned black beans, rinsed and drained

  • 1 cup cilantro, chopped

  • 1/4 cup lime juice

  • 1 tablespoon olive oil

  • 2 tablespoons minced Lindsay® Sliced Jalapeno Peppers

  • 1 teaspoon Kosher salt

  • 1 teaspoon garlic, minced

  • 3/4 teaspoon cumin, ground


Cooking Directions

  1. In a large mixing bowl, combine green cabbage, red cabbage, chicken, olives, tomatoes, black beans and cilantro.

  2. Season with lime juice, olive oil, jalapenos, salt, garlic and cumin.
