Olive, Goat Cheese and Caramelized Onion Pizza

Ingredients

  • 1 (10 oz.) prepared pizza dough, thawed if frozen

  • 2 tablespoons extra virgin olive oil

  • 2 medium to large Vidalia onions (or sweet onions), thinly sliced

  • 1/4 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper

  • 2 tablespoons red currant jelly

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon dried rosemary, crushed

  • 1/2 cup halved Lindsay® Kalamata Pitted Olives

  • 1/2 cup halved Lindsay® Pimiento Stuffed Spanish Manzanilla Olives

  • 3/4 cup (3 oz.) crumbled goat cheese


Cooking Directions

  1. Heat oven to 450°F.

  2. Roll dough into a 12-inch round on a floured surface; transfer to a greased baking sheet. Form a rim around edges of dough.

  3. Follow directions on dough package to let dough rise (let stand covered with waxed paper 25 minutes in a warm place).

  4. Meanwhile, in a large skillet, heat olive oil over medium heat.

  5. Add onions; season with salt and pepper.

  6. Toss onions to coat them well with the olive oil; cook 5 minutes.

  7. Reduce heat to low; sauté until onions are soft and caramel in color, about 15 minutes.

  8. Stir in jelly, thyme, and rosemary until jelly is melted.

  9. Spread onion mixture over dough.

  10. Top with both olives and goat cheese.

  11. Bake pizza 12 to 15 minutes, or until the crust is golden brown.
