Warm Olive Oil Garlic Dip with Olives and Country Bread

Ingredients

  • 1/2 cup olive oil

  • 1 tablespoon butter

  • 2 cloves garlic, minced

  • 1 (2 oz.) can anchovy fillets, drained, mashed

  • 1 tablespoon chopped fresh chives

  • 1 tablespoon chopped fresh Italian parsley

  • Freshly ground black pepper

  • 1 (6 oz.) jar Lindsay┬« Sicilian Style Pitted Olives, drained

  • 6 country bread slices


Cooking Directions

  1. In a small saucepan over medium heat, heat oil and butter until bubbly.

  2. Add garlic. Reduce heat to low and cook until garlic is fragrant; do not allow garlic to brown.

  3. Add anchovies and cook, stirring frequently, 2 minutes.

  4. Remove from heat; stir in chives and parsley.

  5. Season with pepper.

  6. Serve warm with olives and bread, for dipping.
