Granola with Pumpkin Seeds, Coconut & Chia Seeds

Our Buttery Olive Oil gives this granola an amazing, rich flavor.

  • 3 cups rolled oats (not instant)

  • 1 cup unsweetened flaked coconut

  • 1 cup pumpkin seeds

  • 1/4 cup chia seeds

  • 2 1/2 tsp ground cinnamon

  • 1 tsp ground ginger

  • 1 tsp sea salt

  • 1/2 cup Lindsay Buttery olive oil

  • 1/2 cup real maple syrup

Cooking Directions

  1. Preheat oven to 300F. In a bowl combine rolled oats, flaked coconut, pumpkin seeds, chia seeds, cinnamon, ginger and salt. Stir to combine. Add Lindsay olive oil and maple syrup. Mix well.

  2. Turn out on 2 parchment lined 1/2 sheet pan (12"x17") and bake for 30-45 minutes stirring every 8-10 minutes until golden brown and crisp. For more granola clusters, stir mixture less frequently during baking.

  3. Remove from oven, let cool and store in a sealed container.
