Herbed Vegetable and Olive Pizza

Ingredients You Need

  • 1/4 cup olive oil

  • 3 cups thinly sliced onion

  • 3 cups green pepper strips

  • 3 lbs. sliced fresh mushrooms

  • 6 (10 oz.) 12-inch thin crust prepared pizza crusts

  • 2 cups prepared pizza sauce

  • 24 plum tomatoes, sliced

  • 3 cups Lindsay® Sliced California Ripe Olives

  • 1 cup chopped fresh basil

  • 1/4 cup chopped fresh rosemary

  • 9 cups (2-1/4 lbs.) shredded Italian blend or mozzarella cheese


Cooking Directions

  1. Heat oven to 450°F.

  2. Heat oil in a large sauté pan over medium heat.

  3. Add onion; sauté 5 minutes.

  4. Add green pepper and mushrooms; sauté 6 to 8 minutes or until softened.

  5. Place pizza crusts on sheet pans; top with pizza sauce, the mushroom mixture, tomatoes, olives, basil and rosemary.

  6. Sprinkle cheese evenly over pizzas.

  7. Bake 12 minutes or until crusts are golden brown.

  8. Cut into wedges to serve.
