Italian White Bean and Spinach Salad

It only takes 10 minutes to make this healthy spinach salad. Try it for a fresh vegetarian lunch or side dish.

Ingredients

  • 1 (15 or 16 oz.) can no salt added cannellini, great northern or navy beans, rinsed and drained

  • 1 (5.0 oz.) container Lindsay┬« Recloseables Pitted Ripe Olives, drained

  • 1 large plum tomato, chopped (1 cup)

  • 2 cups packed baby spinach leaves

  • 3 tablespoons extra virgin olive oil

  • 1 tablespoon balsamic or red wine vinegar

  • 1/2 teaspoon dried rosemary, crushed

  • 1 clove garlic, minced

  • 1/4 teaspoon freshly ground black pepper


Cooking Directions

  1. Combine beans, olives, tomato and spinach in a large bowl; toss well.

  2. Whisk together remaining ingredients in a small bowl; add to olive mixture and toss well.

  3. Serve with additional pepper if desired.
