Sheet Pan Chicken and Sweet Potatoes with Olives

Ingredients

  • 8 boneless, skinless chicken thighs

  • 1 ½ pounds sweet potatoes, cut into 1-inch chunks

  • 1 cup Lindsay Organic Kalamata Olives, drained

  • ¾ cup fresh cranberries

  • ½ cup sliced red onion

  • ¼ cup olive oil

  • 2 teaspoons ground cumin

  • 2 teaspoons smoked paprika

  • 1 teaspoon ground coriander

  • 1 teaspoon salt

  • ½ cup fresh cilantro leaves, chopped


Cooking Directions

  1. Preheat the oven to 400 degrees.

  2. Arrange the chicken on a large rimmed baking sheet.

  3. In a large bowl, toss together the sweet potatoes, olives, cranberries, onion, olive oil, spices and salt. Pour over the chicken, spreading in an even layer.

  4. Bake 35-40 minutes, until the chicken is cooked through and the sweet potatoes are tender.

  5. Sprinkle the cilantro over the chicken and serve.
