Grilled Hummus, Ricotta and Herb Pizza

Ingredients You Need

  • 10 tablespoons extra virgin olive oil, divided

  • 4 (12-inch) prepared pizza crusts

  • 3 cups prepared garlic hummus

  • 3 cups ricotta cheese

  • 2 cups chopped Lindsay® California Large Ripe Pitted Olives

  • 3 cups (12 oz.) crumbled feta cheese

  • 1/4 cup chopped fresh thyme

  • 1/4 cup chopped fresh rosemary

  • 3 cups halved Lindsay® Greek Kalamata Pitted Olives

  • 3/4 cup grated Parmesan cheese

  • 48 small fresh basil leaves


Cooking Directions

  1. Heat grill to medium-low heat or oven to 400°F.

  2. Brush 1 tablespoon of the olive oil over each pizza crust.

  3. In a medium bowl combine hummus, ricotta cheese and chopped olives; mix well.

  4. Spread 1/4 of the mixture over each pizza crust; top each with 3/4 cup feta cheese, 1 tablespoon each thyme and rosemary. Place 3/4 cup halved olives cut side down over each pizza; top with 3 tablespoons of the Parmesan cheese. Drizzle 1-1/2 tablespoons olive oil over each pizza.

  5. Grill on covered grill or bake 12 to 14 minutes or until crust is brown and cheese is melted.

  6. Remove pizza from oven and sprinkle 12 basil leaves over each pizza.
