Cauliflower Crust Pizza

Ingredients

  • 2 tablespoons olive oil, divided

  • 4 cups finely ground cauliflower

  • 1/2 cup water

  • 1/4 teaspoon salt

  • 1 teaspoon fresh black pepper

  • 1 teaspoon dried oregano

  • 1/2 cup freshly grated Parmesan Cheese

  • 1/2 cup grated mozzarella cheese

  • 1 large egg

  • 1/4 cup low-carb marinara

  • 1/2 cup shredded mozzarella cheese

  • 1/4 cup Lindsay Organic Black Ripe Olives - Sliced

  • 1/4 cup sliced mushrooms

  • 1/4 cup fresh spinach

  • 1/4 cup sliced banana peppers

  • 1/4 cup marinated artichokes

  • 1/4 cup sliced cherry tomatoes

  • 1/4 cup mini mozzarella balls

  • To serve: fresh basil, thyme leaves


Cooking Directions

  1. Heat 1 tablespoon olive oil in a medium skillet over moderate heat and add cauliflower. Cook for 2-3 minutes, then add water, salt, black pepper and oregano. Cook for 6-8 minutes more until the water has evaporated and the mixture is dry. Set aside to cool slightly. Place the cauliflower in the center of a clean dish towel and wring out any excess moisture.

  2. Preheat oven to 400F.

  3. Combine the cauliflower mixture, cheeses and egg in a bowl to form the dough. Flatten on a 12" pizza stone or cast iron skillet and drizzle with remaining olive oil. Bake for 20-30 minutes until golden and remove from oven. Customize with your favorite toppings and put the pizza back in the oven for 10 minutes more.

  4. Preheat oven to 400F. Place pizza base in a hot cast iron skillet to ensure crispiness. Arrange toppings on pizza base and bake until cheese is melted and bubbly. Slice and top with fresh basil/thyme.
