Grilled Hummus, Ricotta and Herb Pizza

  • 2-1/2 tablespoons extra virgin olive oil, divided

  • 1 (12-inch) prepared pizza crust or partially cooked homemade pizza crust

  • 3/4 cup prepared garlic hummus

  • 3/4 cup ricotta cheese

  • 1/2 cup halved Lindsay® Large Ripe Pitted Olives

  • 3/4 cup (3 oz.) crumbled feta cheese

  • 1 tablespoon chopped fresh thyme

  • 1 tablespoon chopped fresh rosemary

  • 3/4 cup halved Lindsay® Greek Kalamata Pitted Olives

  • 3 tablespoons grated Parmesan cheese

  • 12 small fresh basil leaves

Cooking Directions

  1. Heat grill to medium heat or oven to 400°F.

  2. 1 tablespoon of the olive oil over pizza crust.

  3. In a medium bowl combine hummus, ricotta cheese and chopped olives; mix well. Spread over crust; top with feta cheese, thyme and rosemary.

  4. Place halved olives cut side down over pizza; sprinkle Parmesan cheese over all. Drizzle remaining 1-1/2 tablespoons olive oil over pizza.

  5. Grill on covered grill or bake 12 to 14 minutes or until crust is brown and cheese is melted. Remove pizza from oven and place basil leaves on pizza.
