Pan Grilled Chicken with Olives and Plum Tomatoes

Beautiful, colorful, and delicious, this recipe is a sure winner as a springtime dinner. There's something about the taste of chicken and olives that we can't get enough of. Throw in the plum tomatoes, and enjoy the incredible, hearty flavors!

Ingredients

  • 4 skinless, boneless chicken breast halves

  • 4 teaspoons olive oil, divided

  • 2 teaspoons poultry magic seasoning*

  • 2 cups diced plum tomatoes

  • 1 (6 oz.) can Lindsay® Ripe Pitted Olives, drained

  • 2 cups hot cooked couscous (2/3 cup uncooked)

  • 1/2 cup (2 oz.) crumbled feta or goat cheese

  • 1/4 cup chopped fresh basil or parsley (optional)


Cooking Directions

  1. Brush both sides of chicken with 2 teaspoons of the oil; sprinkle 1-1/2 teaspoons of the seasoning over chicken.

  2. Heat a ridged grill pan or nonstick skillet over medium heat until hot.

  3. Add chicken; cook 4 to 5 minutes per side or until chicken is no longer pink in center.

  4. Meanwhile, in a medium bowl, combine tomatoes, olives, remaining 2 teaspoons oil and 1/2 teaspoon seasoning.

  5. Transfer chicken and couscous to serving plates; top with olive mixture, cheese and basil.
