Rosemary & Olive Pretzel Dogs with Beer Cheese Dip

Ingredients

For Dough

  • 1 package store-bought pizza dough

For Homemade Dough*

  • I packet of instant yeast

  • 3 cups all-purpose flour

  • 1 teaspoon salt

  • 1 tablespoon melted butter

  • 1 tablespoon of sugar

  • 1 tablespoon minced rosemary

  • 1 2.25 ounce can Lindsay Organic Sliced Black Olives

  • 10-12 hot dogs

For Topping

  • 2 tablespoons baking soda

  • 1 egg, whisked

  • kosher salt

  • 1/2 stick of butter, melted

For Beer Cheese Dip

  • 1/2 stick of unsalted butter

  • 3 cloves garlic, minced

  • 3 tablespoons all-purpose flour

  • 8 ounces of light beer

  • 2 cups of gruyere cheese, shredded

  • ¼ teaspoon cayenne pepper


Cooking Directions

  1. Preheat oven to 475 degrees. Combine boiling water and baking soda in a shallow bowl. Line a baking sheet with parchment paper and set aside. On a lightly oiled surface (spray lightly with non-stick spray), roll the store-bought pizza dough out to a ½-inch thickness. Wrap each hot dog with a dough rope. Dip each side of pretzel dog into baking soda water. Transfer pretzel dogs to baking sheet and brush with whisked egg wash and sprinkle generously with kosher salt. Allow pretzels to rest for 10 minutes and then bake for 8-10 minutes or until golden brown.

  2. While pretzels are baking, prepare cheese sauce. In a small cast iron skillet heat on medium heat add 1/2 stick of butter. When butter has melted, whisk garlic and cook for 1-2 minutes. Whisk in flour and cook for 2-3 minutes, whisking constantly until browned and creamy. Add in beer, whisking constantly for 2-3 minutes or until mixture has thickened and slightly bubbling. Add in cheese in three increments, whisking after each addition has melted. Finish cheese sauce by adding in cayenne pepper and sliced olives.

  3. *To make homemade dough, in a small bowl, combine warm water and yeast and dissolve for 1-2 minutes. In a bowl fitted with a stand mixer and a dough hook (or you can mix by hand if needed) add in flour, salt, melted butter, sugar and yeast mixture. Turn mixer on and knead for about five minutes or until dough is smooth. Place dough into a clean, dry bowl and incorporate Lindsay Olives and rosemary. Cover with a kitchen towel or plastic wrap. Place dough into a dry place for 30-60 minutes or until the dough has doubled in size. Once homemade dough has risen, complete the steps above.
