Turkey Taco Mini Peppers

Ingredients

  • 1 tablespoon extra-virgin olive oil

  • ½ white onion, finely diced

  • 1 pound ground turkey

  • 2 teaspoons of garlic powder

  • 1 tablespoon cumin

  • 1 teaspoon paprika

  • 2 teaspoons salt

  • 1 4.5 ounce can diced green chilis

  • ½ cup of chicken broth

  • 20 mini bell peppers, cored & halved

  • 1 cup pepper jack cheese, shredded

  • ¼ cup sour cream

  • 1 2.25 ounce can sliced Lindsay Black Ripe Olives

  • Fresh cilantro, chopped


Cooking Directions

  1. Preheat oven to 350 F. Core and halve mini peppers. Place on a baking sheet lined with parchment and set aside.

  2. In a medium heavy bottomed skillet, add in olive oil and white onion. Cook for 3-4 minutes on medium heat or until translucent. Add in ground turkey and cook for 5-6 minutes, breaking up the turkey as you go. Add in garlic powder, cumin, paprika, salt, green chilis and chicken broth. Stir together and simmer for 10 minutes.

  3. Remove turkey from heat and gently spoon 1-2 teaspoons of turkey filling into each pepper half. Top with shredded pepper jack cheese and bake for 15-20 minutes or until peppers are tender and the cheese is melted.

  4. Remove from oven and drizzle with sour cream, cilantro and Lindsay Sliced Black Olives.

  5. Pro tip: Put sour cream into a plastic bag and snip the corner to drizzle.
