Family Favorite Meatloaf

The perfect family friendly meatloaf! Ground beef and black olives are a delicious combo in this warm and cozy winter dinner.

  • 1 lb. lean ground beef

  • 1/2 cup minced onion

  • 1/2 cup fresh bread crumbs

  • 2 large egg whites

  • 2 cloves garlic, minced

  • 1/2 teaspoon freshly ground black pepper

  • 1 (2.25 oz.) can Lindsay® Sliced Ripe Pitted Olives, drained

  • 1/2 cup ketchup or barbecue sauce, divided

Cooking Directions

  1. Heat oven to 375°F.

  2. Combine meat, onion, bread crumbs, egg whites, garlic and pepper in a large bowl; mix well.

  3. Add olives and 1/4 cup of the ketchup; mix well.

  4. Transfer to a foil-lined shallow roasting pan or jellyroll pan and shape into an oval 9 x 5-inch loaf. Spread remaining 1/4 cup ketchup over loaf.

  5. Bake 50 minutes or until internal temperature reaches 155*F.

  6. Let stand 5 minutes before slicing (temperature will rise to 160*F.)
