Honey Mustard Potato Salad

The best Honey Mustard Potato Salad recipe! Perfect for picnics and BBQs. We use mayonnaise, honey, yellow mustard and black olives in this delicious side dish. Recipe provided by Elizabeth Hackett of Tucson Arizona.

  • 3 pounds red potatoes with skin, cooked, cooled and cubed

  • 1 cup mayonnaise

  • 3 tablespoons honey

  • 2 tablespoons yellow mustard

  • 1 tablespoon fresh lemon juice

  • 2 teaspoons prepared horseradish

  • 1 teaspoon paprika

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 2 (3.8 oz.) cans Lindsay® Black Ripe Olives - Sliced

  • 1/2 cup (2 oz.) finely shredded sharp cheddar cheese

  • 3/4 cup finely diced fresh fennel (anise)

  • 1/2 cup finely diced red bell pepper

  • Kosher salt and freshly ground black pepper (optional)

Cooking Directions

  1. In a large bowl, combine mayonnaise, honey, mustard, lemon juice, horseradish, paprika, garlic powder, and onion powder.

  2. Add olives, cheese, fennel and red pepper; mix well.

  3. Add potatoes; mix well.

  4. Season to taste with salt and pepper if desired.

  5. Chill at least one hour before serving.
