Fresh Mozzarella Salad

The clean flavors in Fresh Mozzarella Salad are the perfect to complement any dish, or to enjoy on its own for a tasty light and healthy lunch. Fresh, simple to make, and as pretty to look at as it is to eat, the variety of textures in this salad is magic: sweet plump tomatoes, crunchy cucumbers and onions, buttery mozzarella, and meaty olives. Ingredients

  • 1-lb. container small fresh mozzarella balls, well drained

  • 1 cup Lindsay® Black Ripe Olives

  • 1 small cucumber, halved lenghtwise and thinly sliced

  • 1 (12 oz.) package grape tomatoes, rinsed and dried

  • 1/4 cup finely chopped red onion

  • 10 fresh large basil leaves, thinly sliced

  • 1/4 cup extra virgin olive oil


  • Freshly ground black pepper (optional)


  • Salt to taste


Cooking Directions

  1. In a large bowl, combine the cheese, olives, cucumbers, tomatoes, onion, basil and olive oil.

  2. Mix well and season with salt and pepper to taste.

  3. Serve immediately, or cover and refrigerate until ready to serve.
