Goat Cheese and Green Ripe Olive Spread

A Mediterranean cousin of Southern-style pimiento cheese, this spread gives a savory tang to anything you pair it with.

  • 3/4 cup (3 oz.) goat cheese, crumbled

  • 2 tablespoons sour cream or crème fraiche

  • 1/4 teaspoon dried rosemary, crushed

  • 1 small clove garlic, minced

  • 1/2 cup chopped Lindsay® Crafted Green Ripe Olives (about half a can)

  • 1/4 cup diced roasted red peppers, drained and patted dry (about 1 whole pepper)

  • For serving: toasted French bread rounds, crackers, or endive spears

Cooking Directions

  1. In a medium bowl, combine goat cheese, sour cream, rosemary, and garlic; mix well.

  2. Add olives and red peppers; fold in gently.

  3. Serve on French bread, crackers, or endive spears as desired.
