Grilled Chicken Tacos

  • 1-1/2 teaspoons Mexican or fajita seasonings

  • 12 oz. skinless, boneless chicken breasts

  • 8 crisp taco shells

  • 1 cup sliced lettuce

  • 1/2 cup (2 oz.) shredded Monterey jack or pepper jack cheese

  • 1 large ripe tomato, diced

  • 1/3 cup Lindsay® Sliced Ripe Pitted Olives

  • 1/4 cup light or regular sour cream

  • 1/4 cup chopped fresh cilantro

  • Salsa (optional)

Cooking Directions

  1. Heat grill to medium-high heat.

  2. Sprinkle seasoning over both sides of chicken. Grill chicken on a covered grill (or in a ridged grill pan) until chicken is no longer pink in center, 4 to 5 minutes per side.

  3. Transfer to a carving board; cut crosswise into thin slices.

  4. Fill taco shells with chicken, lettuce, cheese, tomato, olives, sour cream and cilantro. Serve with salsa if desired.
