Pan Roasted Asparagus with Olives, Almonds and Parmesan

  • 2 teaspoons olive oil

  • 1 bunch fresh asparagus (about 1 pound), ends trimmed

  • 3/4 cup Lindsay┬« California Ripe Pitted Olives, halved crosswise

  • 1/3 cup slivered almonds, toasted

  • 2 tablespoons grated parmesan cheese

Cooking Directions

  1. Heat oil in a large nonstick skillet over medium heat.

  2. Add asparagus; cook 5 to 6 minutes or until crisp-tender, shaking skillet or turning asparagus over occasionally.

  3. Add olives; cook 2 minutes or until olives are heated through.

  4. Add to serving dish and top with almonds and cheese.
