Pear, Arugula and Olive Salad

  • 4 cups packed arugula or mixed baby greens

  • 2 ripe Comice, Bartlett or Anjou pears (red if available), cored, cut lengthwise into slices

  • 1 cup Lindsay┬« Small Ripe Pitted Olives

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon sherry vinegar or white wine vinegar

  • 1 oz. Parmesan cheese (preferably Parmigiano-Reggiano)

  • Freshly ground black pepper

Cooking Directions

  1. Arrange arugula on four serving plates.

  2. Arrange pears and olives over salads.

  3. Use a small whisk or fork to mix together oil and vinegar; drizzle over salads.

  4. Use a vegetable peeler to shave cheese over salads.

  5. Serve with pepper.
