4 cups packed arugula or mixed baby greens
2 ripe Comice, Bartlett or Anjou pears (red if available), cored, cut lengthwise into slices
1 cup Lindsay® Small Ripe Pitted Olives
2 tablespoons extra virgin olive oil
1 tablespoon sherry vinegar or white wine vinegar
1 oz. Parmesan cheese (preferably Parmigiano-Reggiano)
Freshly ground black pepper
