Capers

Capers are pickled flower buds from the Caper bush, a perennial winter-deciduous plant. Capers are picked by hand (they’re too small and delicate to be picked by a machine), then sorted by size, dried, brined or salted, processed, then packaged. The smallest size, called nonpareil, is the most desirable by consumers and most often used in recipes. Capers inject a salty zing into recipes of all kinds such as pasta, sauces, salads, fish, meat and vegetables.
