Baked Potato Skins with Olives and Feta

Our cheesy baked potato skins are just 5 ingredients and perfect for your game day snack table! We use feta cheese, black olives and tomatoes in this healthy take on the classic. Recipe provided by Julia Baurain, 2nd Place Winner in Lindsay's Love This Recipe Contest.

Ingredients

  • 6 medium russet potatoes, baked, cooled 10 minutes

  • 1/4 cup unsalted butter, melted

  • 1 cup crumbled feta cheese

  • 3/4 cup Lindsay® Sliced Black Ripe Olives

  • 1 large plum tomato, diced


Cooking Directions

  1. Heat oven to 400F.

  2. Cut cooled baked potatoes in half lengthwise. Scoop out inner part of potatoes, leaving a 1/2-inch rim.

  3. Brush butter over all sides of potato skins; place cut sides down on a baking sheet. Bake 6 minutes

  4. Turn and continue baking until golden brown, 6 to 8 minutes.

  5. Meanwhile, combine cheese, olives and tomato.

  6. Spoon mixture into potato skins; return to oven and heat until cheese melts, about 5 minutes. Serve warm.

  7. For an even heartier version, top with ground beef, turkey, chicken or tempeh.
