Easy Chicken Tacos

  • 2 cups shredded leftover Mexican Roast Chicken

  • Reserved olive salsa (about 2/3 cup)

  • 8 crisp taco shells

  • 1 cup shredded Mexican cheese blend or sharp cheddar cheese

  • 1 cup shredded lettuce

  • 1/2 cup diced ripe tomato

  • 1/2 cup sliced Lindsay® Ripe Sliced Olives

  • 1/2 cup diced ripe avocado (optional)

  • Chunky salsa (optional)

Cooking Directions

  1. In a small saucepan or microwave safe bowl, combine chicken and olive salsa.

  2. Heat over medium heat or in microwave oven until hot.

  3. Warm taco shells if desired.

  4. Divide chicken mixture evenly into taco shells; top with cheese, lettuce, tomato, olives and, if desired, avocado and salsa.
