Red Pepper, Olive and Ricotta Cheese Crostini

A picture perfect Thanksgiving or holiday appetizer, these colorful crostini will brighten up any table. Best of all, they come together in just a few short minutes.

Ingredients

  • 1 French Baguette (cut diagonally)

  • 2 Tablespoons Olive Oil

  • 1/2 cup Ricotta Cheese

  • Whole Red Roasted Peppers, cut into small pieces

  • 3 Whole Red Roasted Peppers, cut into small pieces

  • ¼ cup Lindsay Black Ripe Olives, sliced

  • Fresh Thyme Sprigs for garnish


Cooking Directions

  1. Preheat your oven to 375°F degrees.

  2. Cut the baguette into 12 round slices and place on a parchment-lined baking sheet.

  3. Drizzle the baguette slices with 2 tablespoons of olive oil.

  4. Toast the baguette slices in the preheated oven for 10-12 minutes.

  5. Top each baguette slices with 2 teaspoons of ricotta cheese, a couple of pieces of chopped roasted red pepper and 3-4 slices of Lindsay Black Ripe Olives.

  6. Place the crostini on a serving plate then sprinkle with some fresh thyme for garnish and a light drizzle of olive oil.
