Marinated Roasted Olives

Your guests will love this quick roasted olives appetizer! It's ready in less than 30 minutes with warm olives, fennel, thyme and garlic.

  • 1 tablespoon extra virgin olive oil

  • 6 large cloves garlic, peeled and lightly crushed

  • Pinch of pepper flakes

  • 1/4 teaspoon fennel seeds

  • 5 or 6 fresh thyme sprigs

  • 1 can Lindsay® Large Ripe Pitted Olives, drained

  • 1 can Lindsay® Green Olives or any other Lindsay® Green Olive drained

  • 4 long orange peel strips

  • 4 long lemon peel strips

  • Juice of half a lemon (2 tablespoons)

  • 1/4 teaspoon salt

Cooking Directions

  1. Heat oven to 400°F.

  2. Heat oil in a large oven-proof skillet (wrap handle in foil) over medium heat. Add garlic; sauté 2 minutes. Add red pepper flakes, fennel seeds and thyme sprigs; sauté 1 minute.

  3. Stir in olives, orange and lemon peel.

  4. Transfer skillet to oven; bake 10 minutes or until olives are softened and heated through.

  5. Season with lemon juice and salt. Serve warm.
