Monster Keto Deviled Egg Eyes

Make these low-carb and keto-friendly avocado deviled eggs for a creepy Halloween party. Don’t skip the food coloring to create the spider web pattern on the eggs.

  • 6 eggs

  • 3 Tbsp avocado

  • 1 tsp lemon juice

  • Salt and pepper, to taste

  • 2 tsp black food coloring

  • 12 slices Lindsay Black Ripe Olives

Cooking Directions

  1. Add eggs to a medium pot, cover with cold water and bring to a boil. Put a lid on the pot and turn off the burner. Let the eggs sit undisturbed for 15 minutes. Then, cool in cold running water.

  2. After the eggs are cooled to the touch, gently roll the egg on the counter to crack, but do not peel. Combine 4 cups water with 2 tsp black food coloring. Add eggs to mixture. Let soak 2-3 hours. Remove from food coloring and peel the eggs.

  3. Slice eggs in half lengthwise and remove yolks. Place yolks in a bowl. Add avocado, lemon juice plus salt and pepper to taste. Beat with a hand mixer or mash with a fork until smooth.

  4. Scoop mixture into egg white halves using a spoon. For a more professional finish, scoop the mixture into a plastic sandwich bag and cut the corner to create a piping bag.

  5. Top with a slice of a black ripe olive.
